Among these are various short chain and other fatty acids, amino acids, peptides, polyamins, carbohydrates, vitamins, and numerous antioxidants and phytosterols. More than 4000 plant flavonoids have been identified, approximately 600 carotenoids, and some of these have an antioxidant potential 10 time as strong as that of vitamins C and E.’
